– 1½ cup almond flour
– 1¼ cup gluten-free all-purpose flour
– ½ cup granulated sugar
– 2 teaspoons baking powder
– ¼ teaspoon baking soda
– pinch of sea salt
– 1 cup unsweetened nut milk of choice
– ¼ cup neutral oil we used avocado oil
– 2 teaspoons fresh lemon juice
– 2 tablespoons maple syrup
– 1 teaspoon vanilla extract
– 1 cup fresh blueberrie
This recipe is for Vegan Blueberry Muffins, but you could easily add other mix-ins to the batter. Chocolate chips, raisins, or even shredded coconut would be delicious!
