blueberry Muffins

INGREDIENTS

– 1½ cup almond flour – 1¼ cup gluten-free all-purpose flour – ½ cup granulated sugar – 2 teaspoons baking powder – ¼ teaspoon baking soda – pinch of sea salt – 1 cup unsweetened nut milk of choice – ¼ cup neutral oil we used avocado oil – 2 teaspoons fresh lemon juice – 2 tablespoons maple syrup – 1 teaspoon vanilla extract – 1 cup fresh blueberrie

INGREDIENTS

Streusel Topping – ¼ cup vegan butter melted – ⅓ cup brown sugar – 1 tablespoon white sugar – pinch of sea salt – ⅔ cup gluten-free all-purpose flour

STEP 1

In a large bowl, combine almond flour, gluten-free flour, sugar, baking powder, baking soda, and salt.

STEP 2

In another bowl, whisk together nut milk, oil, lemon juice, maple syrup, and vanilla.

STEP 3

Pour wet ingredients into dry and mix until just combined. Stir in blueberries.

STEP 4

For streusel, mix streusel ingredients until crumbly.

STEP 5

Divide batter into muffin cups, top with streusel.

STEP 6

Bake for 25-30 minutes until a toothpick comes out clean.

Tips for Making  Vegan Blueberry Muffin:

This recipe is for Vegan Blueberry Muffins, but you could easily add other mix-ins to the batter. Chocolate chips, raisins, or even shredded coconut would be delicious!
