INGREDIENTS

– 1 1/4 cup almond milk or any other milk-flavored plant milk, lukewarm – 14 g 4 teaspoons dried instant yeast – 1/4 cup caster sugar or baking sugar see note – 4 cups white bread flour see note – 2 teaspoons ground cinnamon – 1/2 teaspoon mixed spice or pumpkin pie spice – 1/2 teaspoon ground nutmeg – 1 teaspoon salt – 2 teaspoons vanilla extract – 75 g 2/3 cup vegan butter – zest of one orange – 3 ounces 1/2 cup sultanas (golden raisins) Crosse – 1/4 cup all-purpose flour – 3 Tablespoons water Glaze – 3 Tablespoons apricot jam – 2 Tablespoons

STEP 1

Combine ground flax and water; let sit for 5 minutes to make flax eggs.

STEP 2

Cream butter and sugar until light and fluffy. Add vanilla and flax eggs, mix well.

STEP 3

In a separate bowl, mix dry ingredients.

STEP 4

Gradually add flour mixture to wet ingredients on low speed.

STEP 5

Whisk aquafaba on high until stiff peaks form, then fold into the batter.

STEP 6

Gently fold in strawberries.

STEP 7

Pour batter into the prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.

STEP 8

Cool in the pan for 30 minutes before serving.

Tips for Making   Vegan Hot Cross Bun:

There’s special flour just for baking stuff? Yep! Baking flour has more protein than all-purpose flour, yields more gluten, makes a stronger, more elastic dough, and makes for nice texture.
