VEGAN PEACH

INGREDIENTS

– 4 cups sliced fresh peaches (about 5 large peaches) peeled if desired, but not necessary – 1/4 cup maple syrup – 1 Tablespoon cornstarch or tapioca flour – 1/2 teaspoon cinnamon Crumble – 1/2 cup vegan butter melted – 3/4 cup granulated sugar – 1 teaspoon pure vanilla extract – 2 Tablespoons unsweetened non-dairy milk – 1 cup all purpose flour can use gluten-free if necessary – 1 teaspoon baking powder – 1/4 teaspoon sea salt

STEP 1

Place sliced peaches in a 2-quart baking dish. Drizzle with maple syrup, sprinkle with cornstarch and cinnamon, and mix well.

STEP 2

In a large bowl, mix together the crumble ingredients to form a thick batter.

STEP 3

Drop dollops of the batter over the peaches.

STEP 4

Transfer the dish to the oven and bake for 35-40 minutes, until the crumble is golden and the peaches are bubbly.

STEP 5

Let cool slightly and serve with vanilla ice cream.
