SHEET PAN

TOFU AND VEGGIES

INGREDIENTS

– 2 tbsp olive oil – 2 tbsp hoisin sauce – 2 tbsp garlic powder – 2 tbsp rice vinegar – 2 tbsp maple syrup – ½ tsp Sambal Oelek (you can add more if you like spicy food) – 14 oz extra firm tofu – 1 onion, sliced – 1 ½ cups red, yellow, and orange mini peppers cut in half, seeds removed – 1 small broccoli in floret – Salt to taste – Black pepper to taste – Rice for serving

STEP 1

Combine olive oil, hoisin sauce, garlic powder, rice vinegar, maple syrup, and Sambal Oelek.

STEP 2

Set aside. Press tofu to remove water, then cut into triangles. Arrange tofu on baking sheet, drizzle with half of marinade, and toss to coat.

STEP 3

Bake for 15 minutes. Remove from oven, turn tofu, and push to one side.

STEP 4

Arrange vegetables on sheet, pour remaining marinade over them, and bake for another 15 minutes.

STEP 5

Season to taste and serve with rice. Enjoy!

Tips for Making  Sheet Pan Tofu and Veggies:

– If you’re in a hurry and don’t mind your tofu being less crispy, you can cook it for only 15 minutes, the same time you cook the veggies.
