VEGAN blueberry pancake

INGREDIENTS

– 1 Tablespoon ground flax – 3 Tablespoons water – 1 teaspoon vanilla extract – 1/4 cup unsweetened applesauce – 2 teaspoons baking powder – 1/4 teaspoon sea salt – 1 cup all-purpose flour – 1/2 cup rolled oat – 1/2 cup unsweetened almond milk – 1/2 cup blueberries + more for topping

STEP 1

Mix flax with water in a large bowl; let stand for 2-3 minutes until thick.

STEP 2

Whisk in vanilla, applesauce, baking powder, and sea salt.

STEP 3

Add flour, mix well, then stir in rolled oats and almond milk until just combined. Rest for 10 minutes.

STEP 4

Place 1/4 cup batter on griddle, top with blueberries, cook 2-3 minutes until edges set and bubbles form. Flip and cook another minute until done. Repeat with remaining batter.

STEP 5

Serve with blueberries and maple syrup if desired.

Tips for Making  Vegan Blueberry Pancakes:

Be sure to use a non-stick pan or grease with oil or a small pat of vegan butter to make sure there aren’t any sticky issues.
