INGREDIENTS
– 1 pink-fleshed dragon fruit
– 1 cup lemon juice from approx. 8 lemon
– ⅓ cup maple syrup
– 4½ cups water
– Ice to serve (optional)

Rinse blackberries, pat dry. Combine blackberries, sugar, and water in a saucepan.

Add mint if desired. Simmer for 10-15 mins until the blackberries soften.

Cool slightly, then strain the juice into the container. Discard pulp, seeds, and mint.
