INGREDIENTS

– 1 block extra firm tofu, pressed and cubed – 2 tbsp olive oil – 1 pint cherry tomatoes, halved – 2 garlic cloves, minced – 2 tbsp balsamic vinegar – 1 tbsp maple syrup – 2 tbsp fresh basil leaves, chopped – Red pepper flakes, optional – Chopped and roasted nuts, optional – Salt and black pepper, optional

STEP 1

Press tofu, cube, season with oil, salt, pepper. Bake at 400°F for 25-30 mins until crispy.

STEP 2

Sauté garlic, cherry tomatoes in olive oil. Add balsamic vinegar, maple syrup, basil, red pepper flakes. Simmer 2-3 mins.
