ENERGY BITES

INGREDIENTS

– 1 cup carrots – 1 cup pecans, chopped – 1 cup old-fashioned rolled oats – 1/4 cup coconut, shredded – 1/2 cup pitted dates – 1/4 cup almond butter – 3 tablespoons maple syrup – 1 tablespoon chai spice – 1 teaspoon vanilla extract Coating – 4 oz vegan white chocolate chips – 1 teaspoon coconut oil – 1/2 cup 

STEP 1

Combine all energy bite ingredients in a food processor and pulse.

STEP 2

Roll mixture into 16 large or 32 small balls, place on parchment-lined sheet.

STEP 3

Melt white chocolate chips and coconut oil.

STEP 4

Dip each energy bite into melted chocolate.

STEP 5

Roll coated bites in shredded coconut. Refrigerate until set.

Tips for Making  Bunny Tail Energy Bites:

– If the dough sticks to your hands too much while rolling, dampen them slightly before beginning to roll. Just be sure your hands aren’t too wet, or that could affect the consistency of the dough. You may need to dampen again every few balls. This should help keep your hands cleaner and make it easier to roll.
