Banana oat

INGREDIENTS

– 2 Tablespoons ground flax seed – 6 Tablespoons water – 1 cup whole wheat flour – 1 1/2 cups rolled oat – 1/2 teaspoon baking powder – 1/2 teaspoon baking soda – 1/2 cup coconut sugar – 2 Tablespoon coconut oil melted – 1 medium ripe banana mashed – 1 teaspoon vanilla extract – 1 cup dried fruit (raisins, dried cherries, etc)

STEP 1

Preheat the oven to 350°F. In a small bowl, mix ground flax and water. Set aside for 10 minutes until thickened. In a large bowl, combine flour, oats, baking powder, baking soda, salt, and coconut sugar.

STEP 2

Add flax mixture, oil, mashed banana, and vanilla to the dry ingredients. Mix well. Fold in dried fruit. Drop tablespoonfuls of dough onto a baking sheet lined with parchment paper or silicone mats. Bake for 12 minutes or until lightly golden.

Tips for Making  Banana Oat Cookies:

Using whole wheat flour in place of all purpose flour is a great way to get added health benefits. If whole wheat pastry flour is available to you, this is an even better option for the texture of your cookies.
