In under 30 minutes, you can make fluffy Vegan French Toast. This meal idea is great for any time of the day, including brunch! Use your favorite fruit or maple syrup to top the french toast.

Instructions
In a shallow bowl, whisk together the ground flax and almond milk. Let sit for 5 minutes to thicken.
Add in the sugar, cinnamon, vanilla, sat salt, and nutmeg. Whisk well until combined.
Melt a tablespoon or so of cooking oil or butter in a large non-stick skillet over medium heat.
Dip each piece of bread into the mix for about 5 seconds per side. Place the bread into the skillet in a single layer and fry for 2-3 minutes per side until golden brown and crispy.
Repeat with the remaining bread.
To serve, top with fresh berries and maple syrup.

Type of Bread to Use
It is said that the top bread to use for French Toast is Brioche, French Baguette, or Challah. I use sourdough a lot for french toast, but you can use whatever you have on hand.
Change Up the Toppings
