Ingredients

  • 1 1/4 cups fresh blueberries
  • 1 peach, pitted and diced
  • 2 Tablespoons fresh lemon juice
  • 2 Tablespoons chopped fresh parsley
  • 1/4 cup red bell pepper, diced finely
  • 1/2 - 1 teaspoon maple syrup
  • 1/4 teaspoon salt

Instructions

  • Put blueberries in food processor. Pulse 4-5 times until blueberries are coarsely chopped. Keep some blueberries whole - do not over chop.
  • Add blueberries to a medium-sized bowl. Add all remaining ingredients.
  • Mix well and taste for sweetness, adding more maple syrup if necessary.
  • Cover and refrigerate until ready to serve.
