Vegan Honey

This vegan honey is extremely easy to make and tastes so much like the real thing!

Ingredients

  • 2 cups apple juice
  • 1 cup light brown sugar
  • 1 tea bag spiced chai tea*

Instructions

  • Mix the apple juice, tea bag and brown sugar in a medium-sized pot. Bring to a boil while stirring often. Leave tea bag in mixture for 1 minute after the start of the boil, then remove (It will break open if you leave it in longer).
  • Lower the heat to a simmer (medium low heat) and stir periorically until the mixture starts to thicken. This will take approximately 30-40 minutes.
  • Place in the refrigerator for 1 hour in order for the honey to thicken. Place in storing jar and enjoy.

Notes

Chai tea substitution - you can use chamomile tea instead of chai tea.
It is important to get the right consistency before taking the mixture off of the burner. If it is taken off the burner too soon, the honey will be too runny. Take it off too late, and the honey will be too thick. The best way to judge is to cook it to the point where it starts to thicken (when the bubbles are thicker and stay on top longer). It will be about less than half of the liquid from when you started.
