Chocolate Covered Rice Cakes

These are SO great to snack on or as desserts or treats.  They are highly adaptable because you can decide what kind of chocolate and what toppings you want to add.

Ingredients

  • 16 Plain rice cakes
  • 11.5 ounces chocolate chips
  • Toppings of choice nuts, dried fruit, freeze dried fruit, fresh fruit, nut butters

Instructions

  • Place chocolate chips in a medium to large bowl.  Place in the microwave for 1 minute. Stir well.  Place back into the microwave for only 30 seconds, stir well and repeat for another 30 seconds, if needed, until you attain a spreadable consistency.
  • Use a spoon spread melted chocolate onto a rice cake.  Add toppings of choice and set on a cooling rack until chocolate hardens.  Serve and enjoy!

Notes

Be careful when melting chocolate as burnt chocolate tastes very bitter.  After the first minute stir well and heat only 30 seconds at a time after that. 
You can use any kind of chocolate you wish.  I used dark semi-sweet but feel free to experiment with your favorite kinds.
You can use any topping that you desire.  Nuts can be crushed or whole.  Dried fruit freeze dried fruit, fresh fruit, nut butters all work well.  You can sprinkle salt or your favorite spices on them as well.  With fresh fruit you may want to slice them thin to get a better ratio of chocolate and fruit.  Have fun!
