Valentine's Day Truffles

Vegan chocolate Valentine's Day Truffles are such a decadent treat, and you'll be shocked to find out just how easy they come together. Perfect for your loved ones on Valentine's Day (or any day, for that matter)!

Ingredients

  • 5 Tablespoons full fat canned coconut cream
  • 1 cup vegan dark chocolate chips
  • 2-3 Tablespoons agave maple syrup, or other liquid/sticky sweetener
  • 1 cup almond flour
  • pinch of salt
  • mini sprinkles or cocoa powder for coating

Instructions

  • In a small pot, heat the coconut cream.
  • Once the coconut cream is just boiling, turn off the heat and add the dark chocolate chips, stirring to melt.
  • In a large bowl, add the melted chocolate along with the almond flour, agave, and pinch of salt. Mix well until everything is combined.
  • Using a Tablespoon scoop or spoon, form 14-16 truffle balls. Refrigarate 5 minutes and then roll in your hands to smooth. Coat them with mini sprinkles or with cocoa powder.
  • Put in the refrigerator for about 30 minutes before consuming.

Notes

Full Fat Coconut Cream
With the coconut cream, you want to be sure you're using the coconut cream that comes from a can, not a carton like almond milk. The full fat is super important because that's what's going to solidify these sweet little truffles. Low fat coconut cream doesn't have those solids in it, and you'll end up with super soft and sad vegan chocolate balls.
Different Coating Options
Nuts - wanna chop up some nuts and go to town? Girlfriend, be my guest. Think about how pretty these would look rolled in chopped pistachios! Drooling!
Candies - How about peppermint candies? Or red hots? Crunch those all up into super fine pieces and get your sweet tooth on!
Cocoa powder - going a little more classy and simple? Roll your vegan truffle babies in a nice dusting of cocoa powder.
Chocolate coating - OR! You could take some of those chocolate chips and melt them down with coconut oil. Take those truffles for a dunk into that chocolate jacuzzi and let them set in the fridge. Come to mama!
