Ingredients
5Tablespoonsfull fat canned coconut cream
1cupvegan dark chocolate chips
2-3Tablespoonsagavemaple syrup, or other liquid/sticky sweetener
Once the coconut cream is just boiling, turn off the heat and add the dark chocolate chips, stirring to melt.
In a large bowl, add the melted chocolate along with the almond flour, agave, and pinch of salt. Mix well until everything is combined.
Using a Tablespoon scoop or spoon, form 14-16 truffle balls. Refrigarate 5 minutes and then roll in your hands to smooth. Coat them with mini sprinkles or with cocoa powder.
Put in the refrigerator for about 30 minutes before consuming.
Notes
Full Fat Coconut Cream With the coconut cream, you want to be sure you're using the coconut cream that comes from a can, not a carton like almond milk. The full fat is super important because that's what's going to solidify these sweet little truffles. Low fat coconut cream doesn't have those solids in it, and you'll end up with super soft and sad vegan chocolate balls.Different Coating OptionsNuts- wanna chop up some nuts and go to town?
