Copycat Cafe Rio Cilantro Lime Quinoa

Ingredients

  • 4 oz green chiles
  • 1/2 onion roughly chopped
  • 1/2 bunch cilantro
  • 1 1/2 cups quinoa
  • 2 tsp veggie boullion
  • 2 cloves garlic minced
  • 1 1/2 cups water for instant pot
  • 3 cups water for stovetop
  • juice of 2 limes
  • salt & pepper

Instructions

  • In a blender or food processor blend together the green chiles, onion, and cilantro until smooth.
  • Add blended mixture and all remaining ingredients except for the lime juice into a medium saucepan or the pot of your instant pot.

For Instant Pot

  • Cook on manual for 5 minutes and allow pressure to release naturally. Once pressure is completely released, fluff quinoa and mix in lime juice.

For Stovetop

  • Bring mixture to a boil. Cover and lower heat to a low simmer for 25-30 minutes or until quinoa is fluffy and most liquid has evaporated. Fluff quinoa and mix in lime juice.
