Bunny Tail Energy Bites

Ingredients

  • 1 cup carrots
  • 1 cup pecans shredded
  • 1 cup old fashioned rolled oats
  • 1/4 cup coconut shredded
  • 1/2 cup pitted dates
  • 1/4 cup almond butter
  • 3 Tablespoons maple syrup
  • 1 Tablespoon chai spice
  • 1 teaspoon vanilla extract

Topping

  • 4 ounces white chocolate chips vegan
  • 1 teaspoon coconut oil
  • 1/2 cup vegan coconut vegan

Instructions

  • Place all of the ingredients for the energy bites in a food processor and pulse until combined.
  • Roll into 16 large or 32 small balls and place on a parchment-lined baking sheet.
  • Melt the white chocolate chips and coconut oil together in a small saucepan over low heat or in the microwave in a glass bowl in 15-seconds intervals until melted and smooth.
  • Using a toothpick, dip each energy bite into the melted chocolate then roll through the shredded coconut. Refrigerate until set.

Notes

Store in an airtight container in the refrigerator for up to 5 days.

To avoid sticky hands

If you find that the dough is sticking to your hands too much while rolling them, dampen your hands slightly before beginning to roll. Just be sure your hands aren't too wet or that could affect the consistency of the dough. You may need to dampen again every few balls. This should help keep your hands cleaner and make it easier to roll.
