Vegan Peach Cobbler

Is it even possible to resist this classic dessert made from luscious, summer ripe peaches? Not a chance! No need to resist anyway, since this one happens to be healthy and easy!

Ingredients

  • 4 cups sliced fresh peaches (about 5 large peaches) peeled if desired, but not necessary
  • 1/4 cup maple syrup
  • 1 Tablespoon cornstarch or tapioca flour
  • 1/2 teaspoon cinnamon

Crumble

Instructions

  • Preheat oven to 350° F
  • Place the sliced peaches in a 2-quart baking dish and drizzle with maple syrup. Sprinkle with cornstarch and cinnamon. Mix well until combined
  • In a large bowl, mix together the crumble ingredients until a thick batter is formed.
  • Place dollops of the batter over the peaches.
  • Transfer the baking dish to the oven and bake for 35-40 minutes or until the crumble is golden and the peaches are bubbly. Let cool slightly before serving with vanilla ice cream.
