Ingredients

  • 32 ounces frozen tater tots
  • 15 ounce can black beans drained and rinsed
  • 15 ounce can corn drained
  • 1 pint cherry tomatoes halved
  • 1 cup salsa
  • 1 cup vegan cheese sauce divided (3/4 + 1/4 c)
  • 1 avocado pitted and diced
  • 3 green onions thinly sliced
  • handful cilantro chopped

Instructions

  • Preheat oven to 425.
  • Place frozen tater tots in a 9x13 baking pan and bake for 15 minutes in preheated oven.
  • Remove from oven and top with beans, corn, halved tomatoes, salsa, and 3/4 cup cheese sauce. Return to the oven for 12-15 minutes until tomatoes have burst.
  • Remove and top with avocado, green onions, cilantro, and remaining 1/4 cup cheese sauce.

Notes

Vegan Cheese sauce can be made ahead of time or you can use store-bought.
