Ingredients
32ouncesfrozen tater tots
15ouncecan black beansdrained and rinsed
15ouncecan corndrained
1pintcherry tomatoeshalved
1cupsalsa
1cupvegan cheese saucedivided (3/4 + 1/4 c)
1avocadopitted and diced
3green onionsthinly sliced
handful cilantrochopped
Instructions
Preheat oven to 425.
Place frozen tater tots in a 9x13 baking pan and bake for 15 minutes in preheated oven.
Remove from oven and top with beans, corn, halved tomatoes, salsa, and 3/4 cup cheese sauce. Return to the oven for 12-15 minutes until tomatoes have burst.
Remove and top with avocado, green onions, cilantro, and remaining 1/4 cup cheese sauce.
Notes
Vegan Cheese sauce can be made ahead of time or you can use store-bought.
