MEATLESS VEGAN LOBSTER ROLL RECIPE

Equipment

  • MAINE COAST SHAKER DULSE GRANULE ORG, 1.5 OZ

Ingredients

  • 1 can 14 ounces artichoke hearts, drained and roughly chopped
  • 1 can 14 ounces hearts of palm, drained and roughly chopped
  • 2 ribs celery halved and thinly sliced
  • 1/2 cup roughly chopped roasted red pepper
  • 1/2 cup vegan mayonnaise
  • 1/4 cup minced red onion
  • 1 Tablespoon canola oil
  • Juice of 1/2 lemon
  • 1 Tablespoon dulse flakes
  • 2 teaspoons Old Bay Seasoning
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 4 vegan sandwich rolls

Instructions

  • In a medium bowl, combine the artichokes, hearts of palm, celery, red pepper, mayonnaise, onion, canola oil, lemon juice, dulse flakes, old bay, salt, and black pepper until well combined.
  • Fill sandwich rolls and enjoy immediately or refrigerate for 8 hours or up to overnight to really let the flavors meld together before filling rolls.

Notes

As recommended by the recipe creator, Dustin, I took the extra step and toasted the vegan sandwich rolls with a little vegan butter in a small frying pan before loading it up with all the "seafoody" goodness. Such a good choice there!
