These Vegan Slow Cooker Jackfruit Tacos are a real flavorful hit for a busy weeknight dinner when you need to get a healthy meal on the table.

Ingredients

  • 1 onion diced
  • 1 Tablespoon minced garlic
  • 2 20 oz cans jackfruit, drained and rinsed
  • 1 Tablespoon coconut sugar
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 cup fresh orange juice
  • Taco Toppings
  • 24 street taco sized tortillas
  • coleslaw mix
  • avocados
  • cilantro
  • salsa

Instructions

  • In a slow cooker, stir together the onion, garlic, and jackfruit.
  • Combine coconut sugar, oregano, salt, cumin, chili powder, smoked paprika, pepper, and orange juice in a small bowl. Pour over jackfruit mixture.
  • Cover and cook on low for 7-9 hours or on high 3-4 hours.
  • Shred jackfruit with two forks.
  • Fill tortillas with jackfruit filling and top with coleslaw mix, avocado, cilantro, and salsa.
