- 1 onion diced
- 1 Tablespoon minced garlic
- 2 20 oz cans jackfruit, drained and rinsed
- 1 Tablespoon coconut sugar
- 1 tsp oregano
- 1 tsp salt
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp black pepper
- 1/2 cup fresh orange juice

- 24 street taco sized tortillas
- coleslaw mix
- avocados
- cilantro
- salsa
In a slow cooker, stir together the onion, garlic, and jackfruit.
Combine coconut sugar, oregano, salt, cumin, chili powder, smoked paprika, pepper, and orange juice in a small bowl. Pour over jackfruit mixture.
Cover and cook on low for 7-9 hours or on high 3-4 hours.
Shred jackfruit with two forks.
Fill tortillas with jackfruit filling and top with coleslaw mix, avocado, cilantro, and salsa.
