Notes

  • Use baby carrots to save on prep work since they are usually already peeled and cut into smaller pieces. For the potatoes, opt for Yukon Golds or red potatoes, as you won't need to peel them.
  • You can make a "meaty" pot roast even without beef! This plant-based pot roast recipe uses Gardein Beefless Tips, but you can also use Butler soy curls, seitan, seared tempeh, portobello mushrooms, or even jackfruit.
  • If you prefer a thicker sauce on your vegan pot roast, create a slurry with arrowroot powder and water, then stir it into the broth. Arrowroot powder won't alter the taste of the veggie pot roast, and it's best used at the end of the cooking.
