Vegan Pineapple Carrot Cake Smoothie

This smoothie will remind you of your favorite spiced carrot cake, yet is filled with a ton of nutrients to get you through your day.

Ingredients

  • 1 cup pineapple , cubed
  • 1/2 cup coconut milk
  • 2 medium carrots , peeled and roughly chopped
  • 1 apple , cored
  • 1 tsp cinnamon
  • 1 scoop vanilla protein powder
  • 1 Tbsp unsweetened , shredded coconut (plus more for garnish)
  • 1 Tbsp chopped walnuts (plus more for garnish)

Instructions

  • In the jar of a high-speed blender, place all ingredients in the order listed.
  • Blend on high speed until all ingredients are mixed completely and you have the desired consistency.

Notes

If using a Vitamix or Blendtec, just use the "smoothie" option for best results.
Feel free to add a handful of ice cubes for a colder smoothie, but you may need to add slightly more liquid in order to get a smooth blend.
