Melt coconut oil in large pot over medium-high heat. Once hot, add 3 kernels to the oil and cover with a lid. When all three kernels have popped, you are ready to add the remaining cup of kernels to the hot oil.
Once they've been added to the oil, place the lid back on the pot. Shake gently every so often to be sure nothing burns on the bottom. After about 15-25 seconds, the popcorn kernels should all start popping around the same time.Keep the lid on and continue shaking gently from time to time.
Once all the kernels are popped, pour the popcorn into a large bowl immediately. Add the cinnamon, dried apple pieces, craisins, and butterscotch chips (optional).
Mix thoroughly. If using butterscotch, let the popcorn set for an hour or so to allow the butterscotch to firm up a bit.
