Healthier Apple Cinnamon Butterscotch Popcorn

Ingredients

  • 2 Tablespoons coconut oil
  • 1 cup popcorn kernels
  • 2 Tablespoons cinnamon
  • 3/4 cup dried apples , chopped in small pieces
  • 3/4 cup craisins
  • 3/4 cup butterscotch chips (optional)

Instructions

  • Melt coconut oil in large pot over medium-high heat. Once hot, add 3 kernels to the oil and cover with a lid. When all three kernels have popped, you are ready to add the remaining cup of kernels to the hot oil.
  • Once they've been added to the oil, place the lid back on the pot. Shake gently every so often to be sure nothing burns on the bottom. After about 15-25 seconds, the popcorn kernels should all start popping around the same time.Keep the lid on and continue shaking gently from time to time.
  • Once all the kernels are popped, pour the popcorn into a large bowl immediately. Add the cinnamon, dried apple pieces, craisins, and butterscotch chips (optional).
  • Mix thoroughly. If using butterscotch, let the popcorn set for an hour or so to allow the butterscotch to firm up a bit.
