Molasses Cinnamon Chip Cookies with Cinnamon Drizzle

Ingredients

  • 1 cup dark brown sugar
  • 1/3 cup vegetable oil
  • 1/2 cup molasses
  • 1 large egg
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • ½ tsp ginger powder
  • ¼ tsp salt
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 cup Hersheys cinnamon chips

For Drizzle

  • 6 Tablespoons butter , softened
  • 2 cups powdered sugar , sifted
  • 1 Tablespoon milk
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla

Instructions

  • Preheat oven at 350°F.
  • In a large bowl or a stand mixture, blend the sugar, oil, molasses, spices, and salt on medium for 3 minutes.
  • Add the egg and mix until completely blended.
  • Add in baking soda and flour (½ cup at a time). Mix on medium speed until all the flour is incorporated.
  • Pour in cinnamon chips and stir to distribute
  • With a spoon or cookie dough scoop, form small balls of dough and place on a cookie sheet sprayed with Pam baking spray.
  • Put cookie sheet in the oven for 10-12 minutes. Let the cookie sheet cool for about 3 minutes before you remove the cookies.
  • While cookies are cooling, prepare the cinnamon drizzle.
  • Cream the butter in mixer. Add powdered sugar, about 1 cup at a time until completely combined. At this point, it may be dry and crumbly.
  • Add milk and mix well. Incorporate cinnamon and vanilla.
  • Once cookies are completely cooled, place icing in a small ziploc sandwich back. Cut a very small hole in the corner and drizzle icing over cookies.
