Preheat oven at 350°F.
In a large bowl or a stand mixture, blend the sugar, oil, molasses, spices, and salt on medium for 3 minutes.
Add the egg and mix until completely blended.
Add in baking soda and flour (½ cup at a time). Mix on medium speed until all the flour is incorporated.
Pour in cinnamon chips and stir to distribute
With a spoon or cookie dough scoop, form small balls of dough and place on a cookie sheet sprayed with Pam baking spray.
Put cookie sheet in the oven for 10-12 minutes. Let the cookie sheet cool for about 3 minutes before you remove the cookies.
While cookies are cooling, prepare the cinnamon drizzle.
Cream the butter in mixer. Add powdered sugar, about 1 cup at a time until completely combined. At this point, it may be dry and crumbly.
Add milk and mix well. Incorporate cinnamon and vanilla.
Once cookies are completely cooled, place icing in a small ziploc sandwich back. Cut a very small hole in the corner and drizzle icing over cookies.
