Ruby Red Smoothie

Ingredients

  • 1/3 cup old fashioned oats
  • 1 teaspoon flax seed
  • 1 teaspoon chia seeds
  • 1 scoop vanilla protein powder
  • 1/3 cup nonfat Greek yogurt
  • 1/2 cup POM juice
  • 2/3 cup water
  • 1 beet , roasted and peeled (see notes)
  • 4-5 strawberries , frozen
  • 1/3 cup raspberries , frozen
  • 1/2 banana , frozen
  • 10-15 ice cubes

Instructions

  • Add all ingredients to your blender (high speed blender is best), except for the ice cubes. Waiting until the end to add them in will ensure that everything gets blended and will keep it icy and thick. Blend on high and make sure everything is blended together.
  • Add the ice cubes and blend again until ice is all crushed.
  • Serve immediately.

Notes

to roast beets: cut the leafy stems off. Place on a baking sheet with foil. Create a foil envelope around the beets. Roast in a 375 oven for about 45 minutes or until tender when poked with a fork. Take out of the oven and let cool. Once cooled, the peels will come right off and they are ready to use.
