Raw Lasagna

Ingredients

  • 1 zucchini , sliced
  • 2 cups fresh ricotta
  • 1 yellow squash , sliced
  • 2 tomatoes , sliced
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar
  • 2 Tablespoons chopped cilantro

Instructions

  • Divide zucchini among 4 plates.
  • Layer each serving as follows: ricotta, squash, ricotta, tomato, salsa, cheddar, and cilantro.
  • Done - Simplest meal ever.
