Oatmeal Cookie Cheesecake Bars

Ingredients

For Cookie:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 2/3 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1 1/2 cups quick-cooking oars

For Cheesecake:

  • 8 ounces (1/2 package) cream cheese, at room temperature
  • 1/3 cup sour cream , at room temperature
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup toffee bits

Instructions

  • Preheat the oven to 350 degrees F. Spray a 9x13 inch pan with cooking spray.
  • In a bowl of a stand mixer fitted with the paddle attachment, cream together the butter, brown sugar, and granulated sugar on low speed. Beat in the egg and vanilla. Mix in the baking soda, salt, and cinnamon. Slowly beat in the flour. Mix in the oats.
  • Press the dough into the prepared pan in a thin layer. The dough will be sticky, so spray your hands with cooking spray first.
  • Wash and dry the mixer bowl and paddle attachment. beat the cream cheese and sour cream together until smooth. Mix in the sugar, vanilla, and egg and beat until smooth. Some lumps may remain, and that is ok. Pour and spread over the cookie layer.
  • Bake for 25 to 30 minutes until the top bounces back to a light touch. Immediately after removing from the oven, sprinkle the toffee bits evenly across the top of the bars. Let cool completely in pan before cutting into bars. Store in the refrigerator in a sealed container.
