Slow Cooker Vegetarian Pot Roast

Gardein Beefless Tips
(in the freezer aisle with the health-food or other meat-less foods)
Slow Cooker Pot Roast Sauce
(I use Campbells)

red potatoes
, washed and cut into quarters
1
yellow onion
, chopped roughly
1
cup
baby carrots
1
cup
mushrooms
, sliced
4
celery stalks
, sliced into small pieces
Instructions
Place all ingredients in a slow cooker. Stir to be sure it is all combined.
Set on low for 6 hours.
Serve over cooked quinoa or brown rice.
Notes
obviously, you are free to use a real pot roast instead of a meatless variety. Results may vary, as I have not tried this with meat.
