Peanut Butter Apple Banana Bread

Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup unsweetened applesauce
  • 1 tablespoon coconut oil , melted
  • 3 medium ripe bananas
  • 2 eggs
  • 1/3 cup almond milk
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup all-purpose flour
  • 1 cup whole wheat pastry flour
  • 2 apples , peeled and diced (any variety you have on hand)
  • 1/2 cup peanut butter chips

Instructions

  • Preheat oven to 350°F. Grease a loaf pan with cooking spray.
  • Stir together 1/2 cup granulated sugar, 1/2 cup brown sugar, 1/3 cup applesauce, and 1 Tablespoon oil. Set aside.
  • Add 3 bananas, 2 eggs, 1/3 cup milk, 1/2 teaspoon salt, and 1 teaspoon baking soda to a blender and blend until smooth.
  • Pour half the banana mixture into the sugar mixture with 1 cup of all purpose flour. Stir until just incorporated, then add the remaining banana mixture and 1 cup whole wheat flour. Mix until just incorporated. Stir in diced apples and peanut butter chips. Pour into prepared pan.
  • Bake for 45-55 minutes until a toothpick comes out clean.
  • Cool completely before removing loaf from pan.
