Rice and Vegetable Pot Pie Casserole

Ingredients

  • 1 1/2 cups UNCLE BEN' SĀ® ORIGINAL CONVERTEDĀ® Brand Rice ,uncooked
  • 3 1/2 cups frozen mixed vegetables (or a 1 lb. bag)
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 2 cans (10.5 oz.) condensed cream of muchroom condensed soup
  • 2 1/2 cups water
  • 1 cup milk
  • 1-2 cups sliced mushrooms
  • 1 sheet commercially prepared whole wheat pizza dough , cut into biscuit-sized rounds

Instructions

  • Preheat oven to 375 degrees.
  • In a large bowl, stir together the rice, vegetables, pepper, salt, thyme, soup, water, milk and mushrooms.
  • Pour into a lightly greased 9x13 baking dish. Cover with foil and bake for 30 minutes.
  • Remove from oven, uncover, and top with dough rounds.
  • Return to oven and bake for another 20-25 minutes, or until pastry is golden brown and filling is bubbly.
  • Let stand 10 minutes before serving.
