Honey Oat Banana Bread Cake with Granola Crunch Topping

Ingredients

  • 1 1/2 cups whole wheat pastry flour
  • 1/2 cup whole oats
  • 3/4 cup sugar
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 egg whites
  • 1 cup ripe banana , mashed (about 2-3 bananas)
  • 1/3 cup applesauce
  • 1/4 cup honey + enough to drizzle on the top
  • 1 cup granola

Instructions

  • Preheat the oven to 350 degrees F. Lightly grease an 9-inch cake pan.
  • In a large bowl, stir together flour, oats, sugar, baking powder, baking soda, cinnamon, and cloves.
  • Add egg whites, bananas, honey, and applesauce. Stir until just combined. Pour batter into prepared pan.
  • Drizzle with honey and top with granola.
  • Bake in preheated oven for 30 to 40 minutes, until a toothpick inserted into the center of the loaf comes out clean.
