- 1 cup water
- 1 head of red-leaf lettuce
- 1-2 handfuls fresh spinach
- 1 can chickpeas , rinsed and drained
- 2 large carrots , peeled and chopped
- 1 bunch radishes , sliced
- 1 cucumber , peeled and sliced
- 1 can artichoke hearts , drained
Dressing:
- juice of 1 lemon
- extra virgin olive oil
- apple cider vinegar
