Dairy-Free Pina Colada Overnight Oats

Ingredients

  • 1/2 cup pineapple chunks
  • 1/2 cup old-fashioned oats
  • 1 Tablespoon ground flax seeds
  • 2 teaspoons chia seeds
  • 2/3 cup dairy-free milk of your choice (see note below)
  • dried coconut chips

Instructions

  • In a jar, layer the pineapple, oats, flax, and chia seeds in top of each other.
  • Pour milk over ingredients so that it's covering the oats completely. Let sit for at least 4 hours (and up to 3 days) to let ingredients soften.
  • When ready to serve, top with another splash of milk, pineapple, and coconut chips.

Notes

makes 1 serving.
As far as milk goes, using Toasted Coconut Nutchello will give the oats an added coconut flavor as well as sweetness. If you use a non-flavored milk such as almond, soy, or cashew milk, you may want to add a splash of agave or honey for added sweetness.
