Nutella Swirl Brownies - moist, rich, decadent, and swirled with Nutella!

Happy World Nutella Day!  A day to celebrate the blend of perfect hazelnut and chocolate harmony.  A day to really make your tastebuds happy.

What? There’s a big game on and everyone’s blogging about treats and appetizers for the game?  No one really cares about Nutella day?  They only care about the game?  Huh.  Guess I didn’t get the memo.  Seriously, I couldn’t even tell you who’s playing without Googling first.  Usually, I do actually care about the game, but this year, I watched a total of zero football games.

Instead I baked.  I’m so okay with that.  Weekends are the only days I actually get to take advantage of some sort of lighting in my little apartment.  Have I mentioned that?  I have no natural light in my kitchen.  This is why my pictures are a bit lacking.  Well, that and the camera.  No windows.  Nothing.  Just a big ugly fluorescent light overhead.  I should post a picture of my tiny kitchen to show you what I’m working with here.  One day when it doesn’t look like there has been a chocolate and Nutella explosion.

Does anyone else have an issue with poor lighting?  Is anyone else as excited as I am for more daylight in the evenings for this reason?  Basically, even when I am able to bake during the daytime, I still have to take everything over to my family room window in order to get a good shot.  It’s really quite annoying.  I seriously need to get some artificial lighting set-up.  I need to turn my kitchen into a photo studio.  That wouldn’t drive the wife nuts… Anyway, what studio lighting set-ups do you suggest?  I don’t even know where to start!  And I ask myself if my pictures would still lack until I get an actual DSLR rather than my little point-and-shoot.  If that’s the case, I’ve got a long way to go!  This Mama’s on a budget, and a new camera and studio lighting is nowhere to be found on this nifty little spreadsheet of mine telling me what I can and can’t spend money on.  Darn!  (Psst, if you’re interested in helping a sista’ out at all, there is a new donation feature on MHK over to the right.  I promise I would bring some quality recipes and pictures your way if I was able to buy some additional equipment.)

Anyway – bad pictures aside…  Are you baking anything fun for Nutella Day?  Or are you just eating wings, chips and dips, and yummy cocktails?  Or maybe you’re doing both.  I received the Moosewood Restaurant Cooks at Home  for Christmas from the wife’s Aunt Stacey.  I have dog-earred quite a few recipes that I can’t wait to try out.  One that caught my eye was this deliciously easy sounding Moosewood Fudge Brownie recipe.  The Moosewood restaurant has been serving it for over 20 years and they continue to cater to the demand of their customers to this day.  This morning as I was preparing to make these brownies, I thought about how brilliant it would be to swirl some Nutella in these.  About ten minutes later, My Baking Addiction‘s Facebook status announced that it is world Nutella Day today!  What are the odds?  It was meant to be!

These brownies are so fudge-y fantastic!  The wife may or may not be eating them for breakfast.  They are very chocolate-y, in the best of ways.  And the swirl of hazelnut goodness that you get in every bite.  Ahhhh. Heaven!   Milk is not an option here.  Almond Milk, Soy milk, Cow’s Milk – take your pick.  You will need it!

Moosewood Nutella Swirl Brownies

nutritional information

1/2 cup butter
3 oz unsweetened chocolate (1/2 cup)
1 cup lightly packed brown sugar
1/2 teaspoon pure vanilla extract
2 large eggs
1/2 cup unbleached white flour
1/2 cup Nutella Hazelnut Spread

Preheat the oven to 350 degrees F.  Prepare an 8- or 9-inch square baking pan with non-stick cooking spray.

In a small saucepan, melt the butter and chocolate together on low heat, stirring occasionally, so as not to burn the chocolate.  When the butter and chocolate have melted, remove the pot from the heat.

Put brown sugar and vanilla in a large mixing bowl, or the bowl of your stand mixer.  Add the melting chocolate & butter mixture to the brown sugar and mix on low.  Add the eggs and beat until just combined.  Stir in the flour, and mix until the batter is thoroughly blended and smooth. I just mixed the flour in by hand.

Ahhh… now you’re talkin’!

Pour the batter into the pan.  Put the nutella in a small microwave safe bowl and nuke for about 25 seconds just to make it a little bit smoother.  Drop ribbons of Nutella on the brownie batter and swirl with a knife.

Bake for about 20 minutes, until the brownies are just beginning to pull away from the sides of the pan and are fudgy in the center.  If you want more of a cake-like brownie, bake an additional 5 minutes.

Enjoy!  Eat these for lunch.  Or while you’re watching football – I hear there’s a game on tonight…

    Thanks Jen. Yes, they were really quite fabulous. Not sure how I've found the self-control to make them last, but the final brownie of the batch goes in Xander's lunch tomorrow…. guess I'll just have to make more!
