Weekend Web Findings – Mother’s Day Edition + Carrot Cake Juice

 Happy Mother’s Day!!

This is one of my favorite holidays. It’s like I’m a part of this special club that you must be initiated into. Initiated by poop, whiney kids, and stick-figure family portraits. Being a mama is hard work, and it definitely doesn’t come naturally to either me or my honey, but we do the best we can and we’re learning as we go.

Today, I wanted to bring you a recipe that is dedicated to my mom. For as long as I can remember, carrot cake has always been my mom’s favorite cake. That is the cake she would request for her birthday every year. So when I was thinking about what sort of treat to have after my yoga session, I knew I wanted to make a carrot cake inspired drink to share with you.

Carrot Cake Juice // Happy Food Healthy Life

Carrot Cake Juice

  • 1/3 cup nonfat vanilla yogurt
  • 1/3 cup oats
  • 1/2 gala apple , cored
  • 1 teaspoon chia seeds
  • 1 teaspoon flax seeds
  • 1 scoop vanilla protein powder
  • 1 Tablespoon honey
  • 1 teaspoon cinnamon
  • 6-8 ice cubes
  1. Blend water and carrots together in high speed blender until completely smooth.
  2. Add the remaining ingredients and blend again until smooth.

On top of this recipe inspired by my mom, I wanted to share fun mom-inspired posts and pins this week.

Oh that makes for another murphys law for mom’s ” You feed your kids veggies they won’t eat them, you make a smoothie with veggies in it for yourself you kids will steal it from you and drink it all!!” ha ha

oh my goodness it’s SO true!! Good thing when I make smoothies, I really don’t know how to make just a single serving and always end up making enough for a small glass for the kiddo.

My whole family loves carrot cake and this looks delicious. My daughters birthday is soon, maybe I will make her one of these instead of a carrot cake.
