– 15 dates , pitted – 1 cup vanilla almond milk – 3 cups old-fashioned oat – 1/2 cup ground flax seed – 1/2 cup unsweetened coconut – 2/3 cup dried pineapple , chopped into very small piece – 1/3 cup white chocolate chips , chopped into very small piece – 1/3 cup coconut oil , melted


Pulse pitted dates in a food processor until a paste forms. Gradually add almond milk and pulse until smooth. Set aside.


In a large bowl, combine oats, flax, coconut, pineapple, and white chocolate. Add the date sauce and melted coconut oil to the oat mixture. Stir until fully incorporated.


Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined cookie sheet.

Tips for Making  No Bake Tropical Granola Bar:

– To make these bites extra chewy, make sure your dates are soft and fresh. If they’re a bit dry, soak them in warm water for about 10 minutes before using.
