Jerusalem Salad

INGREDIENTS

– 1 large English cucumber – 3 large tomatoes – ½ red onion – ½ cup parsley, loosely packed – 1 Lemon – 3 tbsp extra virgin olive oil – Salt to taste

STEP 1

Slice tomatoes and cucumbers into chunks, chop parsley, and dice red onion.

STEP 2

Add vegetables to a large bowl.

STEP 3

Squeeze lemon juice, drizzle olive oil, and add salt.

STEP 4

Mix well and serve. Enjoy!
