COCONUT

INGREDIENTS

– 1 Tablespoon coconut oil – 1 small yellow onion diced – 4 garlic cloves minced – 2 ” piece of fresh ginger minced – 1 serrano pepper minced – 1 small bunch cilantro stems and leaves separated – both minced – 1 Tablespoon curry powder – 1 pound dry red lentil – 4 cups low-sodium vegetable broth – 1 13.5-ounce can full-fat coconut milk – salt to taste To Serve (optional) – Cooked Rice – Pickled Red Onion – Chopped Cilantro

STEP 1

Heat coconut oil in a large saucepan over medium heat. Cook the onion until translucent, about 4 minutes.

STEP 2

Add garlic, ginger, and serrano, cooking for another minute.

STEP 3

Stir in cilantro stems and curry powder, cooking for 1 more minute.

STEP 4

Add lentils and vegetable broth, cover, and simmer for 10 minutes.

STEP 5

Uncover, add coconut milk and cilantro leaves, and cook for 5 more minutes until lentils are tender. Season with salt. Serve with rice, pickled onion, and extra cilantro.

Tips for Making Coconut Lentil Curry:

– If you don’t have an immersion blender, you can also use a regular blender and work in batches to puree the soup.
