Have you recovered yet? You know, from the big feast? Or are you still living in yoga pants in a food coma?

I have to say I think I did okay. I didn’t over-do it. I ate all the things I wanted to eat. Indulged on the things that are important to me. And more importantly, I brought home leftovers of the foods I love the most so Thanksgiving can happen again and again for a couple more days!

You can bet your bottom dollar that I will be making sandwich after sandwich piled high with mashed potatoes, stuffing, and green bean casserole. Yes, that’s right. A burger with all the fixings!

It all started when I saw Karly’s Thanksgiving Burger. I was in love! After a little back-and-forth conversation, she inspired me to make a veggie burger that was filled with STUFFING!

Totally brilliant, if you ask me. Between the inspiration from Karly and my favorite go-to black bean burger from Tried and Tasty, I knew I’d have a winner on my hands.

Thanksgiving Leftover Veggie Burger

Thanksgiving Leftover Veggie Burger - Want a new and inventive way to make a veggie burger using your leftovers from Thanksgiving? Check this out!

Ingredients

  • 2 15 oz cans black beans, rinsed & drained
  • 1/2 red bell pepper
  • 1/2 white onion , cut into wedges
  • 3 cloves garlic , peeled
  • 1 egg
  • 1 tbsp . chili powder
  • 1 tsp . cumin
  • 1/2 tsp . salt
  • 1 cup leftover stuffing (make sure it’s vegetarian!)

Burger Toppings:

  • leftover mashed potatoes
  • leftover green beans or green bean casserole
  • vegetarian gravy
  • hamburger buns

Instructions

  • Pulse black beans in a food processor until roughly chopped. Alternately, you can mash in a bowl with a fork.
  • Add red pepper, onions, and garlic to beans and pulse all together in the food processor until a “paste” is made.
  • Add black bean mixture to a large bowl along with egg, seasonings, and stuffing. Mix together really well, preferably with your hands, so it all becomes incorporated.
  • Using 1/3 of a cup, divide mixture into patties and fry them up in a frying pan or non-stick griddle on medium heat until brown on one side, about 5-8 minutes. Flip and brown the other side.
  • Once browned, you can create your burger. Top a hamburger bun with stuffing patty, mashed potatoes, green beans, and gravy. Either top with bun or eat open-faced.

    1. I’m so glad you liked this one! It’s a hit around here too – in fact I don’t make it with egg anymore either. Just use a flax egg (1T ground flax + 3T water) to bind it all together, and you’ll be good. In fact, this whole site it full of vegetarian and vegan recipes that you can check out!
