Well, it certainly is that time of year, isn’t it? School hasn’t quite started for us yet, but I’m already feeling the pressure of a busy schedule upon us.

Just this week we had a parent meeting with my son’s new teacher. Another night we were out and about getting some last-minute school shopping done. Another night we were at the school again for back-to-school night. My goodness, it’s just so much sometime, right!

I will admit that most days, I’m home and able to spend 45 minutes to an hour on dinner, but there are some nights when it’s just not feasible. Yet, I don’t want to give in and end up at the drive-thru on those nights either. 

It’s important that we have a few 15-30 minute meals on hand for occasions just like this.

And that is exactly what I’m going to give you with this recipe. Seriously, prepped and on the table within 20 minutes or so. And your family will gobble it up as if you’d spent an hour slaving away.

I generally don’t opt for freezer substitutes to my favorite produce ingredients, but there comes a time when you just gotta give a little ya’ know? Using frozen sweet potatoes is the perfect hack for getting a healthy dinner on the table in no-time.

PLUS, think of all the possibilities. How else could you top these sweet potato waffles?

  • roasted peppers, mushrooms, and a fried egg
  • buffalo chicken, blue cheese, and green onions
  • chili beans, cheese, and sour cream

So many options to get dinner on the table quickly on busy weeknights.

Southwestern Sweet Potato Waffles

Ingredients

  • 1 bag of frozen sweet potato tots (I like Alexia brand because there aren’t many additional ingredients added to the sweet potatoes)

Your Favorite Southwestern Toppings:

  • black beans , drained and rinsed
  • avocados
  • sour cream
  • shredded cheese
  • salsa
  • green onions , chopped

Instructions

  • Preheat waffle iron. Spray with non-stick spray.
  • Place about 1 cup of frozen sweet potato tots into the preheated waffle iron so they cover the iron. Close the iron and turn as you would when making waffles per the manufacturer’s instructions.
  • Once sweet potatoes are completely thawed, cooked through, and browned, carefully place a plate over the waffle and flip iron over to remove. Use hot-pads or a thick towel. Trying to remove the sweet potato with a fork or tongs may result in it falling apart.
  • Top with your favorite southwestern toppings.
  • Enjoy immediately

makes about 4-6 waffles, depending on the size of your waffle iron.
