Ingredients for Vegan Pot Roast

  • Gardein Beefless Tips: These plant-based protein nuggets are the star of this vegan comfort food, providing a meaty and satisfying texture for a traditional pot roast experience. However, take note that these contain wheat and are not gluten-free.
  • Red Potatoes: Washed and quartered, potatoes add heartiness to the dish and absorb the delicious flavors of the broth and seasonings. If you can’t find red potatoes, yellow potatoes are also great for this recipe.
  • Yellow Onion: Roughly chopped yellow onion adds depth of flavor and a subtle sweetness to the pot roast.
  • Baby Carrots: These petite carrots not only contribute to the visual appeal of the dish but also add a touch of natural sweetness.
  • Mushrooms: Sliced mushrooms bring an umami flavor and a meaty texture to the vegetarian pot roast.
  • Celery Stalks: Sliced into small pieces, celery adds a fresh and crunchy element to the hearty dish.
  • Steak Seasoning: A tablespoon of steak seasoning elevates the flavors of the dish, providing a savory and robust taste.
  • Onion Powder: It enhances the savory onion flavor and adds depth to the overall taste profile of the pot roast without beef.
  • Smoked Paprika: Paprika imparts a smoky and slightly spicy note, giving the vegan pot roast just the right kick.
  • Salt and Black Pepper: Salt and pepper enhance the flavors of the comforting pot roast.
  • Vegetable Broth: Vegetable broth serves as the base for the delicious gravy that envelops the vegetables and Beefless Tips for a rich and comforting meatless pot roast.

Tips for Making Vegan Pot Roast

Save On Prep Work

Use baby carrots to save on prep work since they are usually already peeled and cut into smaller pieces. For the potatoes, opt for Yukon Golds or red potatoes, as you won’t need to peel them.

Make It Extra Meaty

You can make a “meaty” pot roast even without beef! This plant-based pot roast recipe uses Gardein Beefless Tips, but you can also use Butler soy curls, seitan, seared tempeh, portobello mushrooms, or even jackfruit.

Thicken the Sauce

If you prefer a thicker sauce on your vegan pot roast, create a slurry with arrowroot powder and water, then stir it into the broth. Arrowroot powder won’t alter the taste of the veggie pot roast, and it’s best used at the end of the cooking.

Vegan Pot Roast Recipe FAQs

Can I use different vegetables in this recipe?

Absolutely! One of the great things about this Vegan Pot Roast is its versatility. Feel free to swap or add your favorite vegetables to suit your taste preferences or use what you have on hand. Consider adding bell peppers, parsnips, or even Brussels sprouts for additional flavors and textures.

Can I make this recipe without a slow cooker?

Yes, you can! If you don’t have a slow cooker, you can still achieve delicious results using a Dutch oven. Simply follow the recipe instructions, but adjust the cooking time until the vegetables are tender and the flavors melded together.

Can I prepare pot roast veg the night before?

Absolutely! You can peel and cut the vegetables for your pot roast the night before. Store them in the fridge for use the next morning.

Why is my vegan pot roast watery?

The vegetables release moisture as they cook, making the vegan pot roast watery. So, to thicken the pot roast gravy, whisk some vegetable stock with cornstarch and stir the mixture back into the slow cooker. Then, cover and cook until you see the rich gravy thicken.

Why does my vegan pot roast have no flavor?

Make sure to cook the pot roast long enough to allow the flavors to develop. You can also enhance the comforting flavor of the vegan pot roast with different herbs and seasonings, such as rosemary, thyme, oregano, garlic powder, and even brown sugar!

Recipe Variations

Feel free to modify this vegan pot roast recipe by adding or substituting the ingredients! You can use sweet potatoes for additional sweetness, turnips for an earthy flavor, lentils for a thicker gravy, or tofu for an extra filling roast.

I’ve been making this since I first found your recipe in 2019 and it’s one of my all-time favorites. Delicious!! I leave out the mushrooms, add green beans, use 2 bags of beefless tips, and use Yukon potatoes. Heaven. Thank you for sharing this!

  2. You can make perfect baked potatoes in the crockpot which I like to do the day after I make veggie chili in it too. Unfortunately mine isn’t very trustworthy lately. It seems to over heat and burn everything even on low heat.

  3. Hi,
I love my slow cooker but there are so many new ways and recipes for me to try. You woild know that my cooker is on its last leg. It got really hot on the outside the last time I used it and now I can not leave it on unless I am home to watch it.
I love your recipes, I have been tring to cut meat out of my husband and I diet. I have been experimenting with tofu. It is really good it takes on the flavor of the marinad or sauce. Thank you again for the healthy recipes have.

  5. I don’t own one! I would love to make apple butter though. My fiance on the other hand would probably want me to make some pulled pork.

  6. I love making chili, tomato sauce, as well as roasted meats and stews in a crock pot. I am a vegetarian and would like a crock pot for my own veggie recipes, but for now I use the one I have for meat dishes my family loves.

  7. I use my slow cooker all of the time. We make all kinds of chicken recipes, chili, pork and beef recipes. Apple sauce and butter. So many things. Hard to choose a favorite.

  8. …chef’s Dinners Done workshops and I’ve done mostly chicken dishes. We season the meat add additional ingredients and put them in ziplock bags in the freezer. It’s so convenient to take out a bag, throw it in the crockpot and voila, dinner is ready when I come home. I love everything I’ve made so far!

  9. I like to use my crock pot during the holidays to keep cider drink warm, its tasty and it smells good! Or i use for a christmas boil – the aroma is amazing!
