Never did I think I’d be cooking fancy-looking food for myself like the dishes from HelloFresh. As a mil spouse, I spend a lot of time by myself, and it can be hard to not just throw another veggie burger in the microwave night after night. Turns out, I deserve better. Hell, I don't even have cable or a way to watch it if i wanted to.⁣ 🏈⁣ But that's not gonna stop me from making (and EATING) these Vegan Totchos!!⁣ ⁣ Nachos + Tater Tots = a party that you do not want to miss!⁣ ⁣ VEGAN TOTCHOS:⁣ 32 ounces frozen tater tots⁣ 15 ounce can black beans, drained and rinsed⁣ 15 ounce can corn, drained⁣ 1 pint cherry tomatoes, halved1 cup salsa⁣ 1 cup vegan cheese sauce, divided (3/4 + 1/4 c)⁣ 1 avocado, pitted and diced⁣ 3 green onions, thinly sliced⁣ ⁣ Preheat oven to 425. Place frozen tater tots in a 9x13 baking pan and bake for 15 minutes in preheated oven.Remove from oven and top with beans, corn, halved tomatoes, salsa, and 3/4 cup cheese sauce.
