Ever since I can remember, I have absolutely loved apple butter. I think it all started at Cracker Barrel. That was the first place I ever experienced this deliciousness spread on my toast. And instead of taking home the mini-bottles of syrup, I really just wanted to hoard jars and jars of the apple butter.

Fortunately, I have been able to find a way to create my very own apple butter at home in just a few minutes.

Cracker barrel is one of those restaurants that fills me with a ton of childhood memories (which I somehow don’t seem to have a ton of because my memory kind of sucks). The triangle peg-stick “Jump All But One” game that you play at the table while waiting for your food that always told me I was an “eg-no-ra-moose.” (what the hell is that anyway?) Or the candy sticks we would always buy from the fun little country store. I’m pretty sure I always chose either root beer or black licorice candies.  My absolute favorite.

Once we had browsed that store for what seemed like forever, it was time to check out, and then we’d look around for Dad. After a quick scan of the store and he’s nowhere in site, we head out to the “front porch” of the restaurant, and of course, there was dad just rocking away in one of the old rocking chairs. I’d like to think he was probably imagining country-life where days are slower, sounds are quieter, and there’s just more time to rock away and appreciate your surroundings.

So that is where apple butter takes me. Apple butter takes me back to country life. The 13 acres I grew up on in Indiana. The corn we played hide-and-seek in with our yellow lab, Jake. The hammock way out in the yard where I’d go just to read and enjoy the peacefulness.

How to Make Quick & Easy Apple Butter in a Blendtec
  • 1/2 cup warm water
  • 1 twp fresh lemon juice
  • 2 Tablespoons molasses
  • 2 apples , peeled, sliced, and steamed until fork tender
  • 3 soft dates , pitted
  • 1 "x1" piece lemon zest
  • 1/2 teaspoon ground cinnamon
  1. To steam apples: In a small saucepan, fill about halfway with water and place a steaming basket inside with your sliced apples. Cover with a lid and simmer on medium high heat until apples are fork-tender. Remove from heat.
  2. Add all ingredients to your Blendtec jar in the order listed and secure the lid. Blend until everything is combined (I used the "smoothie" setting on the Blendtec).
  3. Serve or store in refrigerator.

    I love that this doesn’t have any added sugar in it! And no cloves…I have never made other recipes for apple butter because I never have cloves and they are pretty expensive to buy. I plan to try this today to help using up some of our fall apples! Thanks so much!!
