My dear friend, Lisa, is one of the most deserving people I know. Both for this sweet bundle of joy that will soon be making her appearance into this world, and also for this little shin-dig we’ve put together in her honor. Lisa is so kind and generous, and truly one of the sweetest people I know. She and I have had some long long chats and she’s gotten me through some pretty rough patches over the last year. I’m so privileged to be able to call Lisa my friend!

So when I was first invited to the shower and asked to bring something to share, I knew it had to be something sweet and fresh, just like this new baby will be. I also knew I had to bring something that could be made for lots of people really quickly. And let me tell you, this is a quick one! It all came together in about 15 minutes, and the mousse doesn’t even need to set or anything. You whip it up, fold it together, layer it up, and there you have it.

You know what the best part about baby showers are (besides the teeny-tiny outfits and itty bitty socks!)? All the delicious food! Thankfully, I’m not the only one who brought goodies to this shower. My friends all brought some delicious food as well! Below the recipe, you’ll find all the goods. Don’t forget to check them out. No-Bake Lemon Berry Cheesecake Mousse Parfait
Servings: 8 parfaits
  • 1 cup heavy whipping cream
  • 1 cup lemon pie filling
  • 16 ounces cream cheese (I used a 1/2 Greek Yogurt 1/2 cream cheese blend found at Kroger)
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/2 cup almonds , roughly chopped
  • 1 cup of sliced strawberries and raspberries
  1. In your stand mixer, mix the whipping cream until stiff. Put whipped cream into a separate bowl and set aside. No need to wash the bowl before continuing.
  2. Add the lemon pie filling and cream cheese to the mixer and beat until smooth. Add the vanilla extract and powdered sugar and beat until combined.
  3. Place filling into a piping bag and pipe into small glasses until about halfway full (I actually used votive candle holders that I picked up from the dollar store).
  4. Top with a spoonful of chopped almonds and sliced strawberries. Full the remainder of the glass with more of the lemon mousse filling. Top with a few raspberries.

    Hi, I love your blog and I’ve already tried quite a few things! I have a question about what lemon pie filling is. Is it a powder mix or a can? Could I replace it with lemon curd?

      Maria, I’m so glad you’ve tried my recipes! That makes me so happy. As for the lemon, it’s in a can and lemon curd will work just fine.

        Just a quick note to let you know I made it with lemon curd and it was delicious! Also, as I didn’t have almonds, I crumbled almond wafers and it worked really well. I loved it and so did my guests! Beautiful presentation and really easy to put together.

      Yeah I had to really use restraints to not eat all the mousse by myself. Shipped them off to the neighbors quickly
