My seven-year-old son is pretty darn predictable. I can foresee just about every snack he’ll ask for, every bottle of colorful sprinkles he’ll spill all over the floor (yup, that happened just before this photo shoot), and every whine of boredom that comes out of his mouth this summer. I know that from the moment the thermometer rises above 70 degrees, he will start asking for a popsicle every afternoon.
My kiddo hates the heat. Getting cooled off is his number one priority all through the summer, and really, I can’t say I blame him a whole lot. Especially when getting cooled off, sometimes means a refreshing fruit bar.
To kick off the beginning of summer, I knew I wanted to do things a little bit differently. I wanted to dress these babies up for my kiddo (well, and for me too!).
I had seen the classic Magic Shell recipe around the web, and I knew I could easily make a dark chocolate version for my Coconut and Milk Fruttare Bars. But for the Mango Fruit Bars, I decided to think a bit outside the box. We all know that strawberries and mangoes go so well together, so I tried my hand at a White Chocolate Strawberry Magic Shell.
My son was so excited when he saw the two sauces and toppings I had put out for these “Kick-off to Summer Fruit Bars.” It’s so wonderful that I only have to go a tiny bit out of my way to make my son happy and excited. It’s these little things that count.
And he sure had a lot to say about the Fruit and Juice Bars on their own! They were bursting with a ton of fresh fruit flavor and there are so many delicious flavors to choose from. As you can see from my Instagram, I had a hard time choosing!
And when it comes to my kid, you can’t have a “Kick-off to Summer” party without a rockin’ playlist for an impromptu dance party in the living room (with a popsicle in each hand).

- 1/2 cup white chocolate chips
- 1/2 cup strawberry puree, (blend strawberries into a sauce)
- 1 Tablespoon coconut oil
- Combine all ingredients in a glass bowl sitting on top of a small sauce pan of boiling water (or a double boiler if you have one).
- Stir constantly while on medium low heat until the mixture is completely melted and smooth.
- Pour into a jar and put in the refrigerator until ready to use.
- Bring to room temperature or microwave until soft. Once ready to use, pour over your ice cream or popsicle, and the magic shell will harden.
