And with America comes the classics. I’m talking apple pie, chocolate chip cookies, and of course a classic strawberry ice cream. Fresh strawberries. Full of classic flavor. And in this case, it’s even lightened up and made completely guilt-free without compromising the all-American flavor.

This ice cream comes together with just a few ingredients and in no time at all. Before you know it, you will be celebrating the all-American way with something as classic as fireworks, funnel cakes, Gluten Free Ice Cream Cone Cupcakes and the Star Spangled Banner.

Homemade Vegan Strawberry Ice Cream

Ingredients

  • 2 cans coconut milk , refrigerated
  • ¾ cup soy vanilla creamer (or additional coconut milk and an additional teaspoon of vanilla extract)
  • ¼ cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup strawberry puree (blended from about 8 hulled strawberries)
  • ½ cup strawberries , diced

Instructions

  • Be sure the bowl of your ice cream maker has been in the freezer for at least 12 hours before starting!
  • Either in a large bowl or in a blender, combine the coconut milk, creamer, sugar, vanilla extract, and strawberry puree.
  • Once combined, pour it all into your ice cream maker, following the manufacturer’s instructions. It will take approximately 20 minutes to set up.
  • About 5 minutes before the churning process is over, add in the diced strawberries to be sure they get worked through the ice cream.
  • Once churned, it’s ready to put into a freezer-safe container or pan.
  • Freeze for a couple of hours to set.

    1. So sorry for the confusion Alison! I have updated the recipe to reflect the correct measurement of 3/4 cup of creamer. You’re welcome to use more coconut milk instead alternatively.

  2. Can you use more coconut milk in place of the soy creamer? Or coconut cream?Or another creamer?

    1. Lorraine, you are welcome to use another creamer. The addition of the soy vanilla creamer is for flavor, but I can understand not wanting to use soy. I’ve made this ice cream successfully with cow-based dairy creamer just fine 🙂 Enjoy!
