Everyone loves Christmas cookies. It seems like during this time of the year there is no shortage of them either. Sugar cookies. Gingerbread cookies. Thumbprint cookies. All the classics and a lot of fun variations to change things up. Plates of cookies for the neighbors. Some to take to work. And of course, the plate of cookies you’ve got to leave for Santa!

My point is, there are a whole lot of cookies everywhere you turn, and you’re possibly freaking out a little bit about all the treats and what they’re doing for your waist-line. With these cookies, you don’t have to worry at all!

I teamed up with 566 other bloggers to participate in one of the biggest cookie swaps ever, and I knew I had to contribute these gems. They are definitely not the prettiest cookies, which I was super nervous about, but they are packed full of peppermint flavor and a ton of healthy ingredients that you can’t even taste.

So let me tell you about this cookie swap. All 566 were teamed up with 3 other bloggers, baked up 3 dozen cookies, and shipped them off to 3 different states across the country. Each of us bloggers contributed a small donation in order to join the swap, and our awesome sponsors (OXO, Dixie Crystals Sugar, Brownie Brittle, and California Olive Ranch) matched our donations. We were able to raise over $12,000 for this cookie swap, and we are so glad to be able to present it to Cookies for Kids Cancer. During the holiday season, it really can’t get better than that. Just thinking about some children that have to spend the holiday season in hospitals while they’re battling cancer is heart-breaking to me. I’m happy to be a part of a blogging community who does so many charitable events such as this one. I’ve met some amazing women with some huge hearts in this blogging community.

As soon as I joined the swap, I knew I would be showing of my skills of making delicious food healthier. Oats, chia, flax, honey, it’s all such awesome healthy feel-good ingredients. Sure there is a little brown sugar and the little Hershey kisses, but nothing major. Just enough to get you in the holiday spirit. I was so excited when one of my cookie recipients shared her excitement of receiving my cookies on Instagram. I was so nervous that after travelling across the country, they would end up broken, dried out, and just plain blah. Luckily, I got the report that they were none of these things. Still soft after days of travel!

These are perfect for making ahead of time. But don’t make them too early… you’ll have a hard time keeping your hands off them and they’ll be gone before the big jolly ole man even gets geared up on his sleigh!

Ingredients

  • 2 cups Old-Fashioned Oats
  • 3/4 cup brown sugar
  • 2/3 cup whole wheat pastry flour
  • 2 Tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 Tablespoons ground flax
  • 6 Tablespoons water
  • 3/4 cup Peppermint Hershey Kisses , chopped (about 20)
  • 1/2 cup coconut oil , melted
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350 degrees F.
  • In a small bowl, combine flax and water. Set aside.
  • In a large bowl, mix oats, brown sugar, flour, chia, cinnamon, baking soda, baking powder, and salt.
  • Stir the flax and water mixture so it's about the consistency of egg whites. Add oil, vanilla, and flax mixture to the oat mixture. Mix well. Works best using your hands.
  • Add peppermint candy and combine.
  • Form golf-ball-sized balls and place on a silicone- or parchment-lined cookie sheets.
  • Bake 13 minutes and let cool before removing and transferring to a cooling rack.
