This past weekend, I attended my niece’s 11th birthday party. Such a fun age on the cusp of her teenage years. We have a special bond that I absolutely adore even more as she is growing into the sweetest young woman (gah, I hated it when someone older called me a young woman back when I was one). But really, she’s quirky, she’s crazy, and she’s full of in-your-face personality. And on the flip side she’s also so caring, loving, and tender-hearted.
Watching her grow into this person has been so fun. This birthday, instead of going ga-ga over Monster High toys, she was overcome with emotion and joy when her dad brought out two hamsters that she had been wishing for for months. I know she’s going to be the best and most caring mama to those little furry guys.
And although Oak’s party wouldn’t be complete without a tie-dyed cake full of unnatural colors that would turn your insides neon, I just wanted to celebrate this little lady’s birthday with a cake as naturally sweet as she is.
This apple carrot cake is perfect for any after-school snack, mid-day munchies, and to be honest, probably not all that bad for breakfast either!
