As a vegetarian, I get asked some of the same questions over and over again.
“Where do you get your protein?”
“What do you even grill?”
“Do you just eat salad?”
“How do you get your family to eat your vegetarian food?”
To all of these questions, I can answer with one word:

This week, I had a couple girl friends over and tried a couple of MorningStar Farm’s new veggie burgers to throw on the grill with my ears of corn. I tried both the Roasted Garlic and Quinoa burger and the Mediterranean Chickpea Burger. Both were absolutely fantastic and full of flavor. The best part is that both of these girls are die-hard meat lovers and didn’t complain one bit about this meat-free option! They said it was a wonderful light change to the red meat they had been used to when grilling. Music to a vegetarian’s ears!
I knew I wanted to kick up the flavor on these burgers even more, so I whipped up this Salsa/Guac combo while the burgers were on the grill. It came together in no time and really enhanced the flavor of the burgers.
And to stay health conscious, I served these on top of some leafed lettuce so we could enjoy a bun-less burger. I sure wasn’t missing the bun with all the flavor that came through in the burger and the Guaca-Salsa!
- 3 Roma Tomatoes, , seeded and diced
- 1/2 an onion, , diced
- 2 cloves garlic, , minced
- handful cilantro, , chopped
- 1 avocado, , cubed
- 1/3 cup cheddar cheese, , diced
- juice of 1 lime
- 1 teaspoon salt
- Combine all ingredients in a bowl, gently mixing so all flavors come together.
- Be sure to hit the avocado with lime juice directly, so as to prevent browning.
- Serve within an hour of mixing. Will keep for about day in the refrigerator, but best if eaten immediately.
