This hit me a couple weeks ago. I was thinking, “you know, I really don’t like watermelon. So many people love watermelon. How can I make watermelon more delicious?” And the most obvious answer popped into my head right then and there… Just add coconut!! That’s right, friends. Coconut makes everything better. It really does. One day, you’re going to stop reading my blog because all I ever write about is my obsession with coconut. I’m probably not stopping any time soon either. It’s been an almost 30-year obsession.

Oh, and let me just tell you. In this instance… coconut absolutely made this watermelon beverage taste wonderful! That’s saying a lot for someone who isn’t a watermelon fan!

This weekend, I will be about three and a half hours south of Salt Lake City, Utah, in a teeny little town called Torrey. It’s small guys. Nothing there. It basically shuts down in the winter. But in the summer, there are little music festivals and parades here and there. Each year, my wife and I go to Women’s Redrock Music Festival to listen to some amazing folksy and rockin’ chick-powered music, surrounded by a beautiful setting. It is truly my favorite weekend of the entire year. I love it better than Christmas and Thanksgiving, and that’s saying a lot. Sitting among hundreds of beautiful women, brilliant musicians, in an atmosphere where the acoustics are just out of this world… ahhh, it’s my soul’s home! This is the fifth year my wife and I have gone together, and I can’t wait to just relax, unplug {because my media fast is happening this weekend}, and just enjoy life.

My Cocomelon Cooler is a beverage that reminds me to sit down and enjoy life. Before life gets too crazy, sit down long enough to sip on something delicious. It’s something that we sadly have to be reminded to do. This weekend away is one of the few weekends a year that I truly don’t have to do anything at all besides enjoy myself and my sweet company. And I don’t even feel guilty about it. And although this is a non-alcoholic beverage, a shot of coconut rum would be quite delicious in this mixture as well!

Cocomelon Cooler
  • 1/4 of a Small Seedless Watermelon
  • Juice of 1 lime
  • 2-3 ounces Lite Coconut Milk
  • 1 ounce agave
  • 1 teaspoon coconut extract
  • 6-12 ice cubes
  • coconut flakes to garnish
  1. Combine all ingredients besides coconut flakes into a blender. Blend on medium high speed until all combined and smooth.
  2. Pour into 2 glasses and garnish with coconut and a piece of watermelon.

    I think we could be best friends. I hate watermelon too and thought I was the only one! But I do love coconut, and have all of the ingredients on hand. I’ll have to give this a try.
